Processes like drying, salting, fermenting and smoking were developed thousands of years ago. It is the development of modern food processing that has given us the choice of today’s fresh food. Our food supply today is fresher, safer, less contaminated and more natural than for many decades. Modern advances in refrigeration, distribution and food science ensure that we have a regular, reliable and abundant supply of quality, nutritious, uncontaminated, safe and affordable foods.
